I love to cook and bake. One of my goals is to transform the foods that I love into foods that are healthier. I am going to be following a Paleo lifestyle. There is so much information on the world wide web if you want to learn more about it. I like Robb Wolf's website. Here is a basic idea of what it is though.

Now that might seem drastic but so far it hasn't bothered me. Please note that I recommend doing your research and talking to a doctor before making drastic changes to your diet and exercise habits.
One more note, I am still a mom to two healthy kids. They will still drink milk and have balanced meals. I am not going to be making two separate menus for every meal. I am making small changes to their meals by incorporating my healthy foods as side dishes. I really do love to bake. I did promise my kids is that I still will be baking delicious treats for school or special occasions. However, I will not be eating them.... too much.
I like to take pictures and I hope to be able to show you pictures of my completed meals.
So now I get to the part about the foods I make. I am not a recipe follower. I can not always be totally specific about measurements. If you are not really comfortable with cooking, I am not the blog for you to follow. I usually add spices and ingredients to taste. I will try and write down the best I can... but don't be surprised if I say a touch or pinch or shake.
Today's meal was Chicken and Pork Kabobs.
I cut up chicken breasts and boneless pork rib meat. I marinated it in a mixture of olive oil, balsamic vinegar and fresh ground Alessi Dipping Spices for Olive Oil. (You can buy it here. I love this spice because it has a nice fresh flavor. It has sea salt, garlic, and a mixture of spices that you grind with the built-in grinder cap.) I let the meats marinate in separate containers overnight. For veggies I used mushrooms, onions and red peppers. I also used fresh pineapple chunks for the sweet aspect. I soaked the bamboo skewers for a couple of hours, so that they didn't burn. When the Kabobs were assembled I sprayed them with a mist of olive oil and placed them on a medium high grill. The side veggies are grilled asparagus and yellow squash. I start them out on some tin foil when the Kabobs are about 3/4 of the way done. I brushed the veggies with the same marinade I used for the meat, but a new batch. When the Kabobs are just done I took the yellow squash and asparagus and laid them on the grill to give some char markings. It was a lovely lunch. I also had a side salad of spinach and shredded carrots and some tomato slices.
